This week we are continuing our month of fall-inspired collagen recipes with these Collagen Pumpkin Brownie Bars from @fit_jade! We would tell you how amazing they are but we’re pretty sure the picture speaks for itself. So since we are all already drooling, here’s how to make them!
Pumpkin Base Ingredients:
1/3 cup oat flour
1 scoop collagen
2 tbsp baking stevia
1 tsp pumpkin pie spice
1/4 tsp cinnamon
1 tsp baking powder
1/4 tsp pink salt
1/4 cup + 2 tbsp pumpkin purée
2 tbsp almond butter
2 tbsp maple syrup
1 egg white (save yolk!)
Brownie Layer Ingredients:
3 tbsp dark cocoa powder
1 tbsp coconut flour
2 tbsp maple syrup
1 egg yolk (saved from before!)
Directions:
Mix pumpkin and brownie layer ingredients in separate bowls. Pour pumpkin batter into a lined 7x5 baking dish and bake at 350F for 15 minutes, then add brownie batter on top and bake for another 10-12 minutes, or till set on top. Let cool and slice into 4-6 pieces. Enjoy!
